Today is National acorn squash day and if I’d had one I would have made an acorn squash dish. But I didn’t. I had a spaghetti squash, so I made Martha Stewart’s Roasted Shrimp with Spaghetti Squash. It was remarkably quick and easy to make, slice then bake the squash. Broil the shrimp and you’re done! It tasted wonderful, like something you’d order from the ‘daily specials’ menu at your favorite restaurant. You can probably guess I like squash- do you? If so what’s your favorite dish?
